Hi Mindy, That sounds very odd. The salted butter is probably why it was too salty, but I think one of your ingredients must have gone bad, because the bread shouldn’t have a bitter or sour taste at all. Or did you use baking soda instead of baking powder? That would taste both bitter and sour, so that could be it. It needs to be baking powder, not baking soda. Hope you’ll try again!

Another factor is the altitude at which you’re baking; if you’re at high altitude, you might need to slightly adjust the oven temperature and bake time. The other thing to remember is that there will usually be a little bit of fall to most keto breads (in fact, every keto bread we’ve ever made) because keto flours lack gluten and are naturally quite dense; however, you can see in the photos, we still got a fairly good rise on this loaf. I would like to point out that the metric conversion of 3/4 cup to 90g coconut flour as stated in your recipe is incorrect. Should be 84g per package labeling (Bob’s Red Mill). Unfortunately I made my first batch with 90g of coconut flour, and it was definitely not “pourable”. More like scoopable. I will try again with correct amount but thought I would point so you can update the recipe. Thank you!

I have a question I hope you can set me straight. I was putting the almond flour in my dry measuring cup and it didn’t seem right. I checked around the internet and found someone who said always weigh almond flour. So, I did. 8oz. = 1 cup so 8oz almond flour. It looks like enough but so much more than one dry measure cup. I got as far as doing the food processor part and realized I needed more eggs. Can I eat eggs everyday on keto


I made this the other day and it’s delicious, I’m able to slice the bread and put it in the toaster. However, my bread did not rise. I’m at high altitude and normally have to back off on leavening, but I followed the recipe as is. Do you suppose I should increase the baking powder? I’m assuming the yeast is there more for flavor, since there is no time for it to rise.

When you are separating the eggs if you use the method of pouring the egg from one half of the shell to the other you have to be extremely careful because the sharp shell can easily break the yolk. There are tools that you can purchase that will cradle the yolk and let the white run into a separate bowl. Or, you can use your hands. You need to make sure that your hands are extremely clean and fresh from being washed. Break the egg into one hand and let the white slip between your slightly separate fingers. The yolk will settle into your hand and the white will slip off into the bowl.
I’ve made plenty of Keto breads over the last few months and this one is definitely the best I’ve found so far. There is still a slight egg taste to the bread, but having the taste of the yeast really helps make it so satisfying to eat. The recipe is quick and simple to make. Because of how successful the bread was I’m really excited to try some of the other recipes on this site.

What is poor food


Hi Brenda, There are various reasons but the most common one is that coconut flour is extremely absorbent and needs a lot of eggs to offset how much moisture it absorbs. If you used a liquid like milk or water, it would fall apart. That being said, this recipe is not dry or dense. Did you try making it? Whipping the egg whites creates the exact opposite effect and the bread turns out light and fluffy. Hope you’ll give it a try!

Can you make whipped cream with half and half


If you’re not a fan of baking but you’re a fan of eating bread, there are places to get keto friendly bread these days. If you’re lucky, you may be able to find a loaf of “Paleo Bread” in the freezer section at Whole Foods Market. This bread is going to cost you over $10 per loaf, but it is made of good ingredients and is a few grams of carbs per slice. There’s also rumors of ALDI carrying a new Zero-Carb bread, but it sells out fast and we haven’t been able to review it. Hopefully in the near future there will be more local buying options for low carb bread, but for now, those are your only options.

Echoing what so many here said already: tried so many keto bread recipes and finally found the BEST!!! I’m excited to have a yeasty bread again. And I’m thinking of making this my basic recipe and then adding things like blueberries or Lily’s chocolate chips or cinnamon or Italian seasoning. etc. Also a little bit of monk fruit sweetener or erythritol. Any harm in those additions?

I followed it to the T used a metal loaf pan inside measure 8 3/4″ long x 2 3/4″ deep. Cooked on middle rack of electric oven for 1 hr 15 min. To get the cup of egg whites it took 7 eggs. I used the yolks for home made ice cream and scrambled eggs next day. Agree the Psyllium husk powder lends a earthy taste. Bob’s Red Mill brand used and ordered from Amazon. Also the Lakes brand grass fed beef gelatin a must and that too from Amazon (its good for overall health so can use in many ways).

My family has always made buttermilk pancakes from scratch and we always separate the eggs, beat the whites to soft peaks and fold them in at the last minute. The pancakes rise beautifully! Omigosh! This bread is just delightful! DH (dear husband) and I started a no carb diet 10 days ago and really miss a bit of carbohydrates. When I ran across this recipe, I had to give it a try. It is delicious! In the middle of moving, I have no access to my food processor. And, I didn’t add anything else that was recommended except for the cream of tarter, which I had on hand. Hi Ashley, Usually egg whites take just a few minutes to beat to stiff peaks. Definitely not 40 minutes. Old eggs can sometimes be the culprit, or a bit of leftover fat/grease from something else in the bowl can prevent stiff peaks (this is especially common when using a plastic bowl). Lastly, it could be that your mixer isn’t powerful enough to beat that many whites to stiff peaks, but this reason is a last resort and probably less likely. Cream of tartar is a huge help in reaching stiff peaks so you can try adding that next time.
